Black Truffle Oil uses Tuber Aestivum: The flavour is earthy and more subtle, there are no notes of garlic.
When deciding on which truffle oil to use, it is for the most part based on what flavour profile you prefer. You could also choose to use both seasonally – White Truffles (tuber magnatum pico) are harvested in the Winter months. Black Truffles (tuber aestivum) are harvested in the Summer months.
