Delicate and elusive, morels are gourmet prized mushrooms for foragers lucky enough to find them in the wild. Nutty, earthy with a meaty texture and often reserved for fancy meals. Untamed feast morel coconut rice is inspired by Thai coconut curry and this dish pairs well with chicken, fish, prawn, tofu, or pork.
Add a can of coconut milk (1 1/2 cups) and water and you have a delicious East meets West rice dish.

Ingredients: Thai jasmine rice, wild morel mushrooms, sea salt, raw cane sugar, porcini mushrooms, spices (lemongrass, galangal, garlic, onion, white pepper, cumin, coriander, turmeric, red chili, lime leaf).
